The slightly peppery taste of the arugula is a good combination with sweet potato and bacon. Mashed potatoes with added vegetables are always nice. Not only when it's cold. This meal is really delicious and can be on your table within 30 minutes. Great for weekdays.
Lean bacon strips
Peel the potatoes and cut into blocks.
Roughly chop the nuts.
Boil a large pan of water and add the sweet potatoes. Boil for about 15 minutes.
Heat a large frying pan and fry the bacon strips in the dry pan.
Drain the potatoes and put back into the pan. Mash roughly with the potato masher.
Spoon the arugula and bacon strips through mashed potato.
Divide the mashed potato over 2 plates and scatter the nuts on top.
