Cooked red beets
Dice the beetroots and cucumber.
Scoop out the avocado flesh into a bowl and mash with a fork.
Stir in the lemon juice and cucumber and season to taste with salt and pepper.
Cut the smoked salmon into small pieces and mix with the dill in a small bowl.
Take 4 small glasses.
Divide half of the avocado mixture over the four glasses, then add the salmon, next the beetroots and finally some more avocado mixture.
Garnish with the mixed sprouts.
