Red onion (rings)
Make the cauliflower rice in a food processor. Melt a bit of coconut oil in a small pan. Add the rice to the pan, put the lid on and cook on a low heat for about 8 minutes.
Mix the avocado, the juice from half a lime, salt and pepper until smooth.
Put some oil in a pan and warm on a medium heat. Put the salmon in the pan and cook for about 4-5 minutes on each side.
Serve with the cauliflower rice and garnish with the avocado sauce and sliced red onion.
