Fry the bacon in a pan without oil until crispy.
Put the strips of bacon on a paper towel to absorb the excess fat.
Finely chop the shallot.
Remove the seeds from the tomato and cut the tomato into small cubes.
Remove the flesh from the avocado and put it in a bowl, finely mash this with a fork.
Then mix the shallot, tomato and lime juice with the avocado. Season with salt and pepper.
Place a slice of bacon on a plate and spread 1 tablespoon of guacamole on it, cover with a second slice of bacon.
Repeat this until you have used all bacon.
