Olive oil (extra vierge)
Preheat the oven to 355°F.
Grease an oven dish with some olive oil.
In a small bowl, beat the eggs with almond milk.
Clean the bell pepper and cut into half rings.
Spread over the oven dish.
Divide the egg mixture between the oven dishes.
Bake the frittata in the center of the preheated oven for 20 minutes.
Dice the avocado and cucumber.
Finely chop the parsley.
Put avocado, cucumber, parsley, lemon juice and olive oil in a bowl with a pinch of salt. Stir well.
Serve the frittata with the salsa.
