Pine nuts (roasted)
Cut the leek into thin rings and finely chop the herbs. Roast the pine nuts over medium heat in a dry frying pan.
Melt the ghee together with the olive oil in a large frying pan.
Cook the leeks while constantly stirring them for 5 minutes until golden brown.
Add the vegetable broth and cook for another 10 minutes until the leek is soft.
Stir in the herbs and sprinkle the pine nuts over the dish just before serving.
