Peel the sweet potatoes and cut into large pieces. Put the sweet potatoes in a pan with water and cook the potatoes until done.
In the meantime, peel the carrots and cut them into pieces. Add the carrot to the sweet potato and cook.
Cut the base of the stalk and seed lists from the bell pepper and then cut the pepper into pieces.
Chop the onion and garlic.
Heat a pan with some coconut oil over medium heat and fry the onion and garlic until translucent. Then add the minced meat and cook until done.
When the minced meat is cooked, add the tomato cubes, bell pepper, paprika powder and a pinch of salt and pepper. Let it simmer on low heat for 10 minutes.
Preheat the oven to 390°F.
Make a smooth mash from the sweet potato and carrot. Season with salt and pepper.
Scoop the minced meat mixture into a baking dish and top it with the sweet potato-carrot puree and distributing it with a fork over the baking dish.
Bake the shepherd’s pie in the preheated oven for 15 minutes.
