An easy. delicious and quick breakfast that looks good as well. It seems as if you can never have enough Paleo breakfast recipes. People are always on the alert for something new to cook first thing in the morning. The kids will love this breakfast burrito. You can replace the spinach with various other vegetables.

Melt the coconut oil in a frying pan over a medium-high heat and cook the spinach until it wilts.

Loosely beat the eggs in a bowl and pour them onto the vegetables in the pan.

Keep stirring until the eggs have set and season to taste with salt, pepper and cumin.

Lay the slices of ham on a chopping board and spoon the egg mixture on top (not too much).

Roll the ham up, use a cocktail pick to hold the burritos together and fry until they are golden brown.

Tip: You can combine the burritos with all sorts of vegetables such as peppers, tomato, zucchini etc.
