Cauliflower pancakes

These pancakes are great for kids. You can "hide" vegetables in them! You can either serve the pancakes as they are or as wraps. You can fill them with all sorts of fillings, for example, steak or chicken breast but they are also very delicious on their own.

Preheat the oven to 190°F and line a baking tray with baking parchment.

Put the cauliflower florets in a food processor and pulse until they resemble rice.

Cook the rice in a saucepan together with half a cup of water.

Drain the rice and squeeze out as much of the water as possible.

Stir the eggs, curry powder and salt through the rice.

Spread the mixture out into circles (not too thin) on the baking parchment and bake in the preheated oven for 15 minutes.

Take the pancakes out of the oven, with the baking parchment still attached, and leave them to cool on a wire rack. This prevents the underneath from becoming soggy.
