The discovery of cauliflower rice was personally my major breakthrough in my transition to paleo eating. Now all the excuses were gone and I was able to continue to enjoy my favorite meals in a responsible and delicious way that actually included rice - such as curries and stir-fry dishes. A real revelation!
Cut the cauliflower into florets.
Place the cauliflower florets in a food processor and grind them into a coarse mixture that looks like rice.
Melt the ghee or coconut oil in a frying pan over medium heat and sauté the onion in it.
Add the rice mixture and the broth (or coconut milk) and fry until the liquid has evaporated and the cauliflower is cooked al dente, stirring constantly.
Season with salt and pepper.
