Mix mayonnaise, mustard, water and a pinch of salt and pepper in bowl into a dressing.
Cut the chicory in half lengthwise and remove the bottom and the hard core too.
Cut the chicory into thin strips.
Finely chop the parsley and chop the walnuts coarsely.
Mix the chicory and parsley into the dressing.
Stir the grapes through and sprinkle the walnuts.
