Heat a little olive oil in a frying pan and gently fry the onion and garlic until the onion is soft.
Add the zucchini, bell pepper, oregano and thyme and fry for 5 minutes.
Add the can of tomato cubes and approximately 1/3 of a can of water to the pan. Give the mixture a good stir and leave to simmer for 10 minutes.
Place the cod fish fillet in the middle of the pan and put the lid on.
Stew the cod until cooked (approximately 8-12 minutes).
