Lemon (juice and grater)
Clean the mushrooms and cut them into slices and finely chop the garlic.
Grate the peel of the lemon and squeeze it.
Heat a frying pan over medium heat with some coconut oil.
Fry the chicken thighs briefly until brown and take them from the pan.
Add some coconut oil and fry the garlic and mushrooms for 10 minutes until done.
Put the chicken back into the pan and add the coconut milk, lemon zest and lemon juice.
Put a lid on the pan and bring to the boil.
Reduce the heat as soon as the mixture boils and fry for about 10 minutes until the chicken thighs are cooked.
