Wash the cucumber and use a spiralizer to make noodles of it.
Mix the vinegar, oil, honey and lemon juice with a pinch of salt and pepper in a small bowl into an even dressing.
Mix the cucumber and carrot noodles in a bowl and sprinkle the sesame seeds on top.
Add dressing according to taste.
