Preheat the oven to 200 degrees Celsius.
Wash the zucchini and first cut into half cm slices, then cut them into strips. Cut the mushroom into wedges. Peel the carrot with a vegetable peeler. Then cut it into thin crescents. Just thin, because then they cook faster. Peel the onion and cut into half rings.
Place the vegetables in the baking dish.
Now make the chimichurri herbal salsa by mixing all ingredients in a bowl.
Place the ground beef in a large bowl and mix half of the chimichurri spice salsa through it. This can be done with a fork or with clean hands.
Now also put the minced meat in the baking dish and mix it with the vegetables. Sprinkle the dish with a little olive oil and put it in the oven for 25 minutes.
After fifteen minutes, take the dish out and mix it again. You can also check whether the carrot is almost cooked. Put it back in and 10 minutes later it's done! Check whether the vegetables are cooked. Otherwise longer in the oven.
Divide the dish between 2 plates. Sprinkle with the chimichurri herbal salsa.
