Grind the broccoli and red onion in a food processor.
Grate the sweet potato with a grater or use the grater pop of the food processor.
Heat oil in a frying pan. Fry the broccoli, red onion and sweet potato grater. Add some curry spices.
Stir fry for about 5 minutes. It is ready quickly since it is very finely grated.
When it is ready, put it on a plate.
In the same pan, fry an omelet of 3 eggs. Add some salt and pepper for taste. Cut it in half.
Grab a plate. Place 2 lettuce leaves on top. On top of that, a half omelet. Spoon the potato grater mixture on top.
Fold the omelet and your calzone omelet is ready!
