Nicole, was inspired by the summer edition of Vegagezond to make a carrot spread. I received this magazine as a gift from my former employer when I left for Spain :) Besides that it was a surprise, I was doubly surprised by the vegan tasty recipes that are in it. Then you can see how colorful the vegan kitchen is. Stijn and I prefer to make our spreads ourselves. My own touch to this recipe is to add ginger to it. This combines wonderfully with carrot and sesame. The sweetness of the carrot makes this spread delicious for young and old on a homemade piece of bread.
