Cut the cucumber in 2 or 3 equal pieces. (Depending on how big your lunch box is) Then cut it in half lengthwise.

Scrape the seeds out of the cucumber with a spoon, so you have nice boats left. Put the seeds in a bowl.

Halve the avocado, remove the stone and mash the flesh on a cutting board. Then add it to the cucumber seeds in the bowl.

Cut the smoked salmon into small pieces.

Mix salmon, lemon juice, salt and pepper and chives into the avocado. Grate some lemon zest over it.

Put the cucumber boats in a lunch box and the avocado salmon spread in a separate sealable container.

Take it to work and put it there in the fridge.
