Cut the onion into rings. And finely chop the garlic. Heat the oil in a frying pan and fry the onion with garlic for 5 minutes until golden brown.

Meanwhile cut the stem of the red pepper. Cut the pepper in half lengthwise and remove the seeds with a sharp knife. Cut the flesh into thin strips.

Clean the bell pepper and cut into strips. Add the paprika, pepper with the paprika and fry for 3 minutes.

Add the tomato cubes and cook with the lid on the pan over low heat for 10 minutes.

Season with salt and pepper.

Meanwhile, make cauliflower couscous by grating cauliflower florets or putting them easily in a food processor.

Halve the tomatoes and add to the vegetable sauce. With too little sauce you can add tomato passata.

Toss and break the eggs over the pan.

Put the lid on the pan and let the eggs set for 5 minutes.

Serve with the cauliflower couscous.
