Boil 2 eggs. (hard or soft, whatever you like)
Dice the mango and cucumber and put them in a bowl.
Chop the red onion and add to the bowl as well.
Grab a handful of fresh cilantro and chop finely.
Sprinkle over the mango, cucumber and onion mixture.
You can sprinkle pumpkin seeds on top.
And squeeze the juice of 1 lime over the salad, mix well and ready.
Serve with the boiled egg.
