Date balls are a delicious and filling Paleo snack. Great for when you fancy something nice to go with your coffee or tea. They are ideal for when you have visitors. They'll be gone in a flash. Which is a good idea as then you don't eat them all yourself!
Chocolate pure (> 70% cocoa)
Roughly chop the dates.
Put the dates, grated coconut and vanilla extract in the food processor and mix until you have a smooth mixture.
Add the walnuts and water and mix thoroughly.
Using your hands make balls from the mixture and place them on a plate.
Put the the balls in the freezer for at least 50 minutes or until they are firm to the touch.
Melt the chocolate with the coconut oil au bain-marie in order to obtain a good consistency.
Coat the balls one by one in the chocolate and put them on a piece of baking parchment.
Place the balls in the fridge to allow the chocolate to set.
