Pine nuts (roasted)
Cut the mushrooms into pieces.
Heat the ghee in a frying pan and cook the mushrooms for about 5 minutes.
Pour in half of the orange juice and cook briefly.
Turn the heat down and allow to cool off.
Season with salt and pepper.
Make a dressing of the rest of the orange juice, the mustard and the olive oil in a bowl.
Mix the endive with mushrooms and the dressing in a large bowl and season with salt and pepper.
Divide over plates and garnish with pine nuts.
