Fish dish with dill

You can make this fish dish in different variations to suit everybody's taste. A delicious and easy to make meal that is really nice with cauliflower mash and a salad. This is the perfect recipe for somebody who loves fish.

Cut the shallots into halves. Finely chop the fresh parsley and dill and slice the leek into rings (save some dill for garnishing).

Preheat the oven to 425°F and lightly grease an oven dish.

Cook the mussels for a few minutes in the fish stock together with the shallots and parsley.

Take the shells out of the pan and pour the stock through a sieve into another pan.

Add the leek to the stock and leave to simmer for half an hour.

Place the white fish fillet and mussels in an oven dish, spoon the leek and stock on top (until the fish is just covered) and sprinkle the dill over it.

Cover the oven dish with aluminum foil and place in the preheated oven for approximately 30 minutes until cooked.

Garnish with some dill and a slice of lemon.
