Preheat the oven to 355°F. Grease a baking dish with some coconut oil.
Cut the chorizo into small dice and heat a frying pan over medium heat, fry the chorizo in 4 minutes until crispy.
Cut the stem starter and the seeds from the peppers. Then cut the flesh into thin strips.
Put the pepper strips and chorizo in the baking dish.
In a bowl, mix the eggs with coconut milk and a pinch of salt and pepper.
Pour this over the mixed vegetables and bake for 30-35 minutes in the preheated oven until the eggs have solidified.
