Preheat the oven to 355°F. Grease a baking dish with some coconut oil.
Cut the woody bottom off the asparagus, chop the onion and finely chop the clove of garlic.
Heat some coconut oil in a frying pan over medium heat and fry the asparagus and onion until done.
Add the garlic and cook for 2 minutes more.
Turn off the heat and put the asparagus mixture in the baking dish.
In a bowl, mix the eggs with coconut milk, lemon juice, thyme, and a pinch of salt and pepper.
Pour this over the asparagus and bake for 45 minutes in the preheated oven.
