Sun dried tomatoes
Bring a pan of water with a pinch of salt to the boil.
Add the kale and cook until done.
Drain the kale and let it loose its steam until it is almost dry.
Put the kale, clove of garlic, a pinch of salt and pepper and a dash of olive oil in a blender / food processor. Mix into a smooth sauce.
Make zoodles from the zucchinis.
Heat a pan over medium heat with some (coconut) oil.
Add the zoodles and sauce to taste and heat the dish while stirring.
Garnish with some sun-dried tomatoes.
