Did you realize that you can grill grapefruit and use it together with avocado to make a summery salad? Very nice! A real summer's recipe. Grapefruit is available all year round but the peak season in the supermarket is between January and May. This salad has an astonishing taste! Most people find salads boring, prove them wrong with this recipe.
Coconut oil (melted)
Coconut blossom sugar
Red onion (fijngesneden)
Apple cider vinegar
Celtic sea salt
Put the oven on the grill setting.
Cut the onion into half moons and dice the avocado. Finely chop the chives.
Peel the grapefruit, cut the flesh into thick slices and place on a baking tray or oven proof plate.
Drizzle the grapefruit with melted coconut oil and the coconut blossom sugar and grill this for about 5-6 minutes until the grapefruit starts to caramelize.
Take the grapefruit from under the grill and let it cool down slightly.
Make the dressing by mixing all the dressing ingredients together in a bowl.
Divide the mixed lettuce over the plates. Arrange the onion, almonds, avocado and grapefruit over the lettuce and drizzle with the dressing.
