Olive oil (mild)
Wash the sweet potatoes and cut diagonally into slices of about half a centimeter.
Place the sweet potato slices in a large bowl and add the olive oil (2 tablespoons) and a pinch of salt. Stir well so that each disc is covered with a layer of oil.
Heat a grill pan over high heat until it is hot.
Grill the sweet potato slices 3 minutes per side until they are cooked. Place them on a large dish.
Finely chop the tomatoes and coriander, chop the onion and cut the lime in half.
Put the tomatoes, coriander, and onion in a bowl and squeeze both halves of the lime above.
Pres the garlic over the bowl.
Add the olive oil (2 tablespoons) and a good pinch of salt and pepper and stir well.
Place the bowl of salsa on the side of the sweet potato slices. Or you can spread the salsa over the sweet potato.
