Peel the sweet potato and parsnip and cut them in pieces. Clean the leek and cut it in pieces of about 1.5 inch.
Take the skin off the garlic.
Boil the potatoes, parsnip, garlic and leeks together in about 15-20 minutes.
Drain and allow to steam for a while.
Put it back in the pan with a knob of butter and mash with a potato masher.
Season with a pinch of salt and pepper.
Cut the spring onion into thin rings and garnish the dish with it.
