Preheat the oven to 375°F.

First make the jacket potato, wrap it in aluminum foil and place in the oven for 1 hour.

Cut the cod into thick strips and carefully dab dry.

Make a plate with almond flour and the Italian spice mix.

Prepare a dish containing the beaten egg.

First sweep the cod through the egg mixture with a fork.

Next, sweep the cod through the almond / spice mixture.

Place the fish fingers on a baking tray, covered with baking paper and place in the oven for 15-20 minutes with the potato.

Meanwhile, make the mini peppers. Blend the tomatoes, garlic, basil and pepper together. Add pepper to taste and fill the peppers.

Remove the fish fingers and potato from the oven. Cut pieces of the potato and make a notch in it. Fill this with some chopped pecans.
