Preheat the oven to 375°F.
First make the jacket potato, wrap it in aluminum foil and place in the oven for 1 hour.
Cut the cod into thick strips and carefully dab dry.
Make a plate with almond flour and the Italian spice mix.
Prepare a dish containing the beaten egg.
First sweep the cod through the egg mixture with a fork.
Next, sweep the cod through the almond / spice mixture.
Place the fish fingers on a baking tray, covered with baking paper and place in the oven for 15-20 minutes with the potato.
