Mini Pizzas with Cashew Cheese

These mini pizzas with cashew cheese may look small and cute, but don't be fooled: they're surprisingly filling thanks to the nuts! I prefer to eat them for lunch with a large salad, but you can also serve them as a snack or hearty snack. They are gluten-free, very easy to make and you can choose any toppings. I added three variations: cherry tomatoes, caramelized onion and smoked paprika. Which one would you choose first?
