Christmas is over now but I am still enjoying it. Mainly from my Christmas package, I work for a company specializing in natural food and natural care. Not surprising that my Christmas package was packed with delicious products! The cookies, chocolate, tea, nuts and coconut water are all used up. Delicious, snacks that you can eat because they are vegan and healthy! There is still quite a lot left but these are products that I have to work with myself .. I opened the bag of amaranth yesterday and let it soak overnight. This morning I decided to have a nice breakfast with it. I only used stuff from the package (as a challenge) so it was a bit of a pain but the result was great! Nice and warm, good filling, super healthy amaranth breakfast with coconut & blueberry sauce!
