A veggie bowl or bean salad is the go-to recipe for me when I don't feel like cooking extensively or have no inspiration at all. A bean salad is made like this and contains everything I am looking for in a complete meal! Before I immersed myself in vegetable food, I was completely unfamiliar with legumes. We ate a capuchin and occasionally kidney beans at home, but I discovered that there was so much more choice, only 2 years ago. Now I can no longer live without it, lentils, chickpeas, black beans and split peas go through in our house in large quantities. I make humus, veggie burgers and even brownies! Because beans are really versatile!
