For some time now I've been working on an easy recipe for healthy vegan muffins. Simply simple, not too many ingredients (so you can also make them when you suddenly feel like muffins - no preparations, no hassle) and easy to make (within 30 minutes including baking time). Muffins are always good! If I feel like baking something, I often fall back on a simple cake or a large batch of cupcakes. Especially when I have a sweet appetite, I don't want to be in the kitchen for centuries, then I want some goodies IMMEDIATELY! I hope you recognize this ..! Every weekend for at least 4 weeks I have been devising and trying out a new muffin recipe and this weekend it was finally hit. Where they did not want to rise or dry, they tried to dry out, they were just right this time !! See delicious chocolate muffins for which you only need seven simple ingredients. You can find all these in your kitchen cupboard. Something that makes me very happy! When I was not blogging myself and so I was not yet thinking of recipes, I often searched them on the internet. I often found these complicated and you needed stuff I had never heard of (think psyllium husk). It will all be very tasty but I really prefer simple and fast! You can make 12 muffins with this recipe, it is now 4 days later and they still taste great. I would say that you can store them for a maximum of a week and then prefer to vacuum pack them and put them in the fridge. Although I don't think these will last for a week because they are really tasty!
