Ice Cream & Desserts
I know I've said this more often about ice creams I've been making lately but I have a new favorite again! Never have I been as creative with ice cream as these 6 weeks. I think I am kindled by all the beautiful photos on instagram. I must and will try and copy everything. Raspberries, strawberries, mango and watermelon, it's all in the blender and then in these fun tins. Three-quarters of the ice creams don't look very bad tasty but hey the eye wants something too. So I don't take pictures and can eat them right away ... every drawback has its advantage! So today a new recipe for passion fruit ice cream with coconut yogurt! These ice creams are inspired by a recipe my big crush Sarah Britton. She makes my heart beat faster with all her great recipes and when I saw the pina colada & passion popsicles in her new book my hands started to itch! These looked so delicious and the recipe .. easy peasy! Unfortunately, it happens quite often in my kitchen that fruit is finished within a day and that was the case now .. no more pineapple and I also had no coconut milk at home. Two of the 4 ingredients required for this recipe. So I had to come up with a variant myself because those ice creams had to and would come! A look in the fridge and the alternative was thought up .. ice creams with coconut yogurt, just as tasty! Now I can not say anything about Sarah's because I have not tried them yet, but I can tell you that these passion fruit coconut ice creams are very good!
