Perfect Christmas breakfast

Christmas is coming and that goes hand in hand with a big planning! What will you make when? When should the groceries be done and how are you going to put the tastiest vegetable meal on the table without getting the comment "where's my meat?" This is all quite a challenge so I recommend starting at the beginning and that is breakfast! Are you staying with your family or are they on your doorstep early? Surprise them with a delicious Christmas breakfast or brunch. The easiest and tastiest dishes in the day. The Christmas breakfast with us is not much different than a Sunday breakfast. Because why change something when it is more than perfect? We always start Sunday morning with a large stack of pancakes. Berries, bananas, chocolate everything goes in or is sprinkled on top. This way you can decorate your own pancakes and you have exactly the breakfast you want! I am a huge fan of banana pancakes so the recipe for these tasty pancakes is based on banana but if you are less of a fan of this you could also replace the banana with sweet potato and / or pumpkin (cook them until they are soft) and they have the same texture as a good ripe banana).
