It is not a vegan brownie and it is not a vegan speculoos. We call this creation a gingerbread brownie! What seemed like a major failure in the kitchen turned out to be nice, because how darn these gingerbread brownies are delicious! Texture of a regular brownie (soft with a crispy layer) but with the taste of speculaas. Guys, it shouldn't get any crazier! It is a good thing that this recipe comes on time because I think we can eat this delicacy every day, from the moment that Sinterklaas sets foot ashore. No bad fats or large amounts of sugar, just fine, beautiful ingredients that nourish and make you happy. Nothing more, nothing less.
