Vegan galette with figs and coconut

A vegan galette is easy to make, but requires some skill. For example, I made at least eight versions until I realized that really cold water (ice water) was the reason why my dough did not stick properly and you then have to leave it in the fridge for at least an hour, not for 10 minutes. But hey, the persistent wins and practice makes perfect. That has become this galette, perfect! Deliciously sweet and crunchy with a surprise effect of coconut & fig jam. Normally I make these galettes with banana but this really did NOT look like the picture so I went for a more cozy color. What could be better than the red color of fresh figs ?! Exactly! Nothing! This recipe is perfect as a dessert but also works well as a decadent cookie with coffee or (in my case) as a tasty snack on the couch in my sweatpants along with a large bowl of ginger tea. So these went in one by one yesterday! Yes, it was a very nice Sunday!
