Vegan sweet potato soup with red lentils

"I don't succeed as you eat. I would like to, but sandwiches are just easy to take with you and made quickly. "I often get this reaction from people. Many want to eat healthier during the day but have the idea that this takes a lot of time and is almost impossible to sustain. I get this! Habits are hard to break, and why should what you get in return seem time consuming? I reasoned like that for a long time. I was used to a peanut butter sandwich and no way that I would make an effort in the evening if I could also watch my favorite series on the couch .. When I did an internship, I lived on 8 sandwiches a day and never really felt top. I got tired quickly and at the end of the day the journey home seemed endless! Not knowing that a simple change in my diet would make me feel a lot better. Now, 2 years later, luckily I know better and I prepare a nice lunch every night for the next day. Trust me I'm never more than 10 minutes away !! How do I do that? Simple, I just make a bit more dinner because almost everything that is tasty in the evening, you can also eat cold. During the week I take chickpeas, lentils, sweet potatoes, quinoa, salads, soup, veggie burgers, pizza and raw vegetables in a container to work. Supplemented with avocados, bananas, nuts, superfoods and berries I can get through my day very well !! Today I have the delicious recipe for my vegan sweet potato soup. I take this in a Tupperware container, sprinkle some roasted chickpeas over it during my lunch break and eat some carrots with it .. Perfect !!
