Sriracha hot chile sauce
Fresh ginger (Grater)

If necessary, remove the skin and bones from the tuna.
Finely slice the red pepper and spring onion and cut the avocado into slices.
Slice the tuna into small pieces (1-2 cm) and put into a bowl.
In another bowl mix the coconut aminos. olive oil, sesame oil, lemon juice, vinegar, Sriracha sauce and salt to taste. Add this mixture to the tuna.
Add the ginger, chili pepper, spring onion and avocado. Add the sesame seeds, reserving 2 teaspoons for garnish. Place in the fridge while you make the rice.
Heat a pan with ghee until hot. Add the cauliflower rice and fry on a medium heat for 5 to 7 minutes. Keep stirring so that it doesn't burn.
Mix the vinegar and salt in a bowl. When the cauliflower rice is ready, take it off the heat and add to the vinegar and salt. Mix well. Divide the rice over two plates. Add the marinated tuna and advocado mixture. Lay the cucumber slices on top and garnish with the rest of the sesame seeds.
