Dice the sweet potato.
Heat the coconut oil in a frying pan and fry the sweet potato cubes until brown and tender. Sprinkle with thyme and some salt and set aside.
In the meantime, place the slices of bacon on a baking sheet with baking paper. Slide the baking tray into the oven and then turn it on at 390°F. Bake the bacon slices in 10 minutes until crispy.
Beat the eggs with coconut milk and a pinch of salt, heat the pan with coconut oil again and fry the eggs until done. Remove the eggs from the pan immediately as soon as they are done.
Serve the scrambled eggs with sweet potato and slices of bacon.
