Combine almonds, dates, apple and cinnamon in a food processor and grind for a few minutes into a thick, smooth mass. Gradually add some water to make this process easier: start with a splash of water up to ½ cup.
Sprinkle shredded coconut on a plate.
Take a large spoon full of the apple-cinnamon mixture and turn it into a large ball, the size of a golf ball, by hand.
Roll the apple cinnamon balls through the shredded coconut until they are covered with it.
Serve immediately or keep the balls in the fridge until serving. The balls become a little more solid in the refrigerator.
