Asparagus with salmon, a classic combination. But this time a different version. By baking these cookies you have a quick breakfast, which you can eat on the go, or take with you for lunch. Healthy, tasty, and a nice for a change.

Combine salmon, egg, coconut flour, mustard, pepper and salt in a blender and grind finely in about 10-20 seconds.

Cut the asparagus tips into thin slices and pulse them through the salmon mixture.

Heat the coconut oil in a frying pan and fry the salmon cookies over medium heat for 3 minutes per side until golden brown and done.
