Ras el Hanout
Chop the liver and carrot into large pieces and grind them into a granular mass in a food processor.
Stir the Ras el Hanout, garlic, pepper, salt, coriander and 1 tablespoon of cassava flour into the mixture.
Sprinkle the rest of the cassava flour on a large plate.
Take a large tablespoon full of the liver mixture and place it on the cassava flour, sprinkle some cassava flour on top to cover the liver with a thin layer of flour and gently shake off the excess flour. Repeat this until you have no liver left.
Heat the coconut oil in a frying pan and bake the cookies over medium heat for about 2 minutes on each side until golden brown.
Serve hot, possibly with your favorite dipping sauce, and enjoy your meal!
