Slice the celery, dice the apple, slice the fennel thinly, slice the gherkins and chop the fresh dill.

Heat the coconut oil in a frying pan and fry the salmon on both sides until golden brown and cooked. Season with salt and pepper.

In a lunch box or large plate, combine the lamb's lettuce with celery, apple, fennel and pickles.
