Peel the sweet potatoes and cut into cubes.
Cut the onions into rings, slice the avocado and chop the fresh mint.
Heat 1 tbsp coconut oil in a frying pan and fry the sausages until done and brown all around.
In the meantime, bring the piece of sweet potato to a boil in a pan with water. Cook for 10 minutes.
Drain the sweet potato, sprinkle with cinnamon and salt and mash using a hand blender.
In the meantime, heat 1 tbsp coconut oil in another frying pan and fry the red onion rings and the slices of pineapple around golden brown.
Divide the sweet mashed potatoes over 2 bowls, put the onion rings and pineapple on top.
Serve with avocado and fresh mint, and the beef sausages.
