Preheat the oven to 390°F and line a baking sheet with baking paper.
Cut the celeriac into cubes, cut the onions into half rings, cut the red peppers into cubes and cut the spring onion into rings.
Rub the celeriac, onions and red peppers with the coconut oil and spread them on the baking sheet.
Put the sausages on top and bake for 25-30 minutes until done.
Garnish with the spring onions and sprinkle with some salt and pepper.
