Preheat the oven to 350 and grease a brownie pan with some coconut oil.
Mix the nut butter, coffee, eggs and maple syrup together in a mixing bowl.
Add the chestnut flour, cocoa, baking soda, vanilla and salt and stir together until you have a thick batter.
Peel the pistachio nuts.
Spoon the chocolate chips, walnuts, pistachio nuts and cranberries through the batter. Spoon the batter into the brownie pan.
Bake the brownies for 25 minutes or until a cocktail pick comes out clean.
