Bring the carrots to the boil in a layer of water and cook over a low heat for 10 minutes.
Drain the carrots and then add the remaining ingredients.
Puree with a hand blender or blender until smooth.
Cover a square baking pan with foil, or use a silicone baking pan. Spoon the carrot fudge in it and smooth it out with the back of a spoon.
Let the fudge harden in the freezer in 2 hours.
Cut the fudge into small cubes and then place them back in the freezer until you serve them.
