Heat the coconut oil in a frying pan and fry the beef sausage until brown and cooked.

In the meantime, wash the carrot and use a peeler to slice it into long ribbons. Continue until you can no longer make ribbons; until you only have the tip of the winter carrot.

Heat a frying pan over medium heat and fry the bacon cubes until they start to become crispy and they have lost most of their fat.

Cut the onion into thin half rings and the brown mushrooms into cubes.

Then add the sliced onion and mushrooms and fry them in the bacon fat until they are soft.

Add the sieved tomatoes, cumin, garlic and pepper, and stir into a sauce.

Carefully scoop the carrot ribbons through the sauce and heat for another 5 to 10 minutes over low heat, depending on how cooked you prefer the carrots. Stir occasionally to prevent the whole from burning.

Meanwhile, cut the cooked beef sausage into slices.

In the last moment, add the spinach and slices of sausage through the dish and stir until the spinach has shrunk a bit. Season the dish with some salt if necessary.

Divide the 'pasta' over the plates and enjoy your meal!
